  • 2.5 to 3 lbs organic pork shoulder (a.k.a. pork butt), trimmed of excess fat

  • 1 tbsp organic olive oil (optional, for browning)

  • 1 medium organic onion, chopped

  • 3–4 cloves organic garlic, minced

  • 1 cup organic salsa or crushed organic tomatoes

  • 1/4 cup organic orange juice (fresh if possible)

  • 1 tbsp organic apple cider vinegar

  • 1 tbsp chili powder

  • 1 tsp cumin

  • 1/2 tsp oregano

  • Salt and pepper to taste

Optional toppings (all organic if possible):

  • Chopped cilantro

  • Sliced avocado

  • Shredded cabbage or lettuce

  • Lime wedges

  • Diced red onion

  • Organic corn or cassava tortillas (grain-free for Whole30)

    Use two forks to pull it apart in the pot. Let it soak in the juices for extra flavor.
