🌶️ How to Make Lentil Chili
🧂 Ingredients:

1 tbsp organic olive oil

1 medium organic onion, chopped

Optional: 1 chopped organic bell pepper, 1 chopped organic carrot, fresh cilantro, lime juice
🔥 Instructions:

Sauté the veggies:
Heat olive oil in a large pot over medium heat. Add onion and sauté 4–5 minutes. Add garlic, bell pepper, and carrot if using. Cook until softened. -
Add spices & tomato paste:
Stir in chili powder, cumin, paprika, salt, pepper, and tomato paste. Cook for 1 minute to release the flavors. -
Add lentils & liquids:
Pour in the lentils, diced tomatoes, beans (if using), and veggie broth. Stir to combine. -
Simmer:
Bring to a boil, then reduce heat and simmer uncovered for 30–35 minutes, or until lentils are tender. Stir occasionally and add water if it gets too thick. -
Taste & adjust:
Add lime juice, extra salt, or chili flakes if desired. Let it sit for 10 minutes before serving to let the flavors deepen.
