  • 1 tbsp organic olive oil

  • 1 medium organic onion, chopped

  • 3 cloves organic garlic, minced

  • 1 cup dry organic brown or green lentils, rinsed

  • 1 can (15 oz) organic diced tomatoes (or 2 cups fresh)

  • 1 can (15 oz) organic black beans (rinsed & drained) – optional for extra heartiness

  • 1 can (15 oz) organic kidney or pinto beans – optional

  • 1 tbsp organic tomato paste

  • 4 cups organic vegetable broth

  • 1 tsp ground cumin

  • 1 tbsp chili powder

  • 1/2 tsp smoked paprika (optional but recommended)

  • Salt & pepper to taste

  • Optional: 1 chopped organic bell pepper, 1 chopped organic carrot, fresh cilantro, lime juice


🔥 Instructions:

  1. Sauté the veggies:
    Heat olive oil in a large pot over medium heat. Add onion and sauté 4–5 minutes. Add garlic, bell pepper, and carrot if using. Cook until softened.

  2. Add spices & tomato paste:
    Stir in chili powder, cumin, paprika, salt, pepper, and tomato paste. Cook for 1 minute to release the flavors.

  3. Add lentils & liquids:
    Pour in the lentils, diced tomatoes, beans (if using), and veggie broth. Stir to combine.

  4. Simmer:
    Bring to a boil, then reduce heat and simmer uncovered for 30–35 minutes, or until lentils are tender. Stir occasionally and add water if it gets too thick.

  5. Taste & adjust:
    Add lime juice, extra salt, or chili flakes if desired. Let it sit for 10 minutes before serving to let the flavors deepen.
