Sweet potato fritters are a tasty and easy-to-make dish that can serve as a side dish, snack, or even a light meal. Here's a simple recipe to whip up some delicious sweet potato fritters.

Ingredients

  • 2 medium sweet potatoes, peeled and grated
  • 1/2 cup all-purpose flour (or gluten-free flour for a GF option)
  • 1/4 cup chopped green onions
  • 2 large eggs, lightly beaten
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1/4 cup vegetable oil or olive oil for frying

Instructions

  1. Prepare the Sweet Potatoes:

    • Peel and grate the sweet potatoes. You can use a box grater or a food processor for this.
  2. Mix the Ingredients:

    • In a large bowl, combine the grated sweet potatoes, flour, green onions, beaten eggs, cumin, smoked paprika, salt, and pepper. Mix well until everything is evenly combined and the mixture holds together.
  3. Shape the Fritters:

    • Take a small handful of the mixture and shape it into a patty about 1/2 inch thick. Repeat with the remaining mixture.
  4. Heat the Oil:

    • Heat the oil in a large skillet over medium heat.
  5. Fry the Fritters:

    • Carefully place the fritters into the hot oil, leaving some space between each fritter. Fry for about 3-4 minutes on each side, or until they are golden brown and crispy.
  6. Drain and Serve:

    • Once cooked, transfer the fritters to a paper towel-lined plate to drain any excess oil. Serve warm.

Serving Suggestions

  • Dipping Sauce: Serve with sour cream, Greek yogurt, or a spicy aioli.
  • Toppings: Top with a sprinkle of fresh herbs like cilantro or parsley, or a squeeze of lime for extra flavor.

These sweet potato fritters are perfect for a quick and easy meal or snack and can be adapted with different spices and herbs to suit your taste preferences. Enjoy!
